We processed venison for our customer. He wanted summer sausage, jalepeno- background-">pepperjack summer sausage and venison sticks made from his venison (84# total venison). We charge $3.00/lb to make the summer sausage and $3.50/lb to makethe sticks. This cost covers the seasonings, casings, smoking and labor involved in making these products. We are a small company and this work is all done by hand, not high tech, mass-produced. If a customer wants beef or pork added to their venison, there is an additional charge to cover that cost. Some people want no added meats, others want 50%, others 1/3, etc. It varies from customer to customer. Pork adds and additional $1.99/lb. When this customer picked up his venison, (on a T), he was surprised at the price. We explained how we came to that total. He wanted 1/pork added to his venison. Example: He wanted 10# of his venison made into sticks. We added 5# pork for 15# total product (2/venison, 1/pork). He had 15# total made into venison sticks, and we charged on the total product made, not on the portion that was venison. When he picked up his meat he spoke with ***, who makes the sausage and is totally capable of explaining the price breakdown. *** told him he would speak to me and I would get back to him on Monday (I was supposed to be off the next day, Friday). I came into work Friday morning specifically to call him so that we could get this cleared up asap. There was no answer so I left a message to call me back. On Friday, I was told of a nasty post he put on facebook. Then I received the letter from you stating he had filed a complaint. After I spoke with the lady at your office, I called our customer again. I went through the whole process again of why we charge what we do. We take great pride in making a quality product and feel our prices are totally fair. He had already tried the sausage and said it was very good. The customer said his dissatisfaction came from being told it would cost $3.00/lb to make the sausage and assumed that included any additional pork or beef that would be added. We value our customers, and in the spirit of good business, I am assuming my employee did not fully explain the additional costs. I asked the customer what we can do to make him happy, and he said he wasn't happy that everything wasn't explained. I offered to re-imburse him for the added pork (42# at $1.99/lb=$83.58). He said that he could "take a hit on half of that". I explained to him that our customers don't "take a hit" when they do business with us. I said I could send him a check for the $or I could issue a gift certificate in that amountHe chose to have a gift certificate issued so that he "can use it the next time he brings in venison". I feel he wassatisfied with this settlement, and I can consider this issue resolved
