However, I would like to mention that if the final count was open for interpretation, then the events coordinator should have called to confirm; in which Mr. [redacted] agrees. I have attached my email to Alexis confirming the final count of 43 people. Please see above.

I have responded directly to the customer as she did email me personally. That being said I would like to address a few things with the bureau. First of all I actually do have the policy of a final count date on both my website and my printed menus. That policy states we need a final...
count 7 days prior to the event. We have this in place so we can purchase the food fresh and prepare it per order as all jobs have different menus. When the client emailed us it was past the cut off date and the reason I decided to make an exception for the chicken fingers was due to the fact they were a frozen product I could keep them in storage and they wouldnt spoil. I was trying to help the client out. That email which was the last one received had no mention of a final count on it anywhere. She keeps staing that she gave a count of 43 but that is not the case. I was able to go through all of my event coordinators email with Mrs Root and I can say without hesitation there was NO count. She also told me that she was upset about our lack of response time to her issues. Her party was on the 4/17/16 She already lodged a complaint with you by the 21rst and emailed me this information after doing that. The day of the event I was asked by Lex if we could change the count that day which I did say no but once the client paid I thought she understood why?? The only mistake that was made was there was no count confirmed after her original estimate of 45-50 with 13 children was given. I was given no chance to handle this before she lodged this complaint.
